to the Specialist Holidays Group Cookery Course for winter 2003.
Our intensive 5-day course is aimed at you if you have limited catering
skills, or wish to learn more about chalet-style catering and high
altitude cooking. It will also help you gain confidence so that
you know you are preparing food to a high standard.
You will be provided with menus covering a two-week period - ideal
for cooking in the mountains - and you will be preparing (and eating)
three-course lunches, afternoon tea and three-course gourmet evening
meals with wine - the highlight of the day!
For the competitive price of £315 you will receive:
- Full-board accommodation (inc continental breakfast, lunch, afternoon
tea & 3-course evening meals)

Most of all, you will cover all the basic techniques that are fundamental
to good cooking, preparing food quickly, and adapting to the confined
space in a chalet kitchen.

Your Questions Answered
Q. Where are the courses held?
A. In boarding schools that are not used during the school holidays,
where there is accommodation for you to stay and good facilities
for you to be able to cook. For actual venues please see the front
cover.
Q. What do I need to bring?
A. You will need to bring enough clothes and toiletries for 5-nights,
including clothes that you can cook in during the day. These do
not need to be chefs whites - comfortable trousers and t-shirts,
with soft rubber-soled shoes are fine.
Q. How do I get there?
A. Full details and maps will be sent to you once your place has
been confirmed. If you are travelling by train, we will arrange
pick-ups from the local station.
Q. What will I gain from the course?
A. Your cookery skills and abilities will improve and you will be
able to confidently go to resort knowing the meals that you will
provide are of a high standard. On successful completion of the
course you will also be guaranteed a position overseas.
Q. Will I gain a qualification?
A. You will receive a certificate to say that you have completed
and passed a Specialist Holidays Group cookery course, which will
help you in the future.
Q. Who will be the tutors?
A. The tutors will be experienced chefs who have worked overseas
in a chalet environment, and understand the needs and requirements
of chalet guests. There will also be managers from overseas on hand
to help and support you over the 5 days, and answer your questions
on running your chalet.
