Stuffed Grapefruit

Serves 8

4 large grapefruit
5 ml (teaspoon) mixed Herbs de Provence
1 225 (8 oz) tub cottage cheese
1 125 g (4 oz) packet herb cheese
1 green pepper, de-seeded
1 cucumber
1 green apple, cored
Worcester sauce
Salt and pepper
Parsley sprigs

Cut the grapefruit in half and scoop the segments into a bowl, removing skin and pith. Chop the apple, pepper and cucumber into 1cm (¼ in) cubes. Keep back some cucumber to slice for garnish.

Add the cubes to the grapefruit flesh; mix in cheeses, herbs - and the Worcester sauce and seasoning to taste. Pile into the grapefruit halves, and garnish with parsley and twists of cucumber slices
