Cider- Baked Pork Chops

Serves 8

8 pork chops
225g (8oz) mushrooms
1.2 litres (2 pints) dry cider
225g(8 oz) grated cheddar
4 cooking apples, peeled, cored and sliced
125 g (4 oz) breadcrumbs
4 onions, sliced
Salt and pepper

Butter a shallow, ovenproof dish. Place the sliced onions in the base of the dish. Season, and add the pork chops. Place the sliced apples on top o the chops, and then add the sliced mushrooms.

Mix the grated cheese and breadcrumbs with the seasonings, and sprinkle over the chops. Pour round the cider, and bake in a pre-heated moderately hot oven (375°F, 190°C, gas 5) for 1¼ - 1¼ hours, until the chops are cooked and the liquid reduced
.
