If you don't take this time off during the period of your contract, for whatever reason, you employer MUST pay you in lieu.

Not necessarily. Certainly, in UK business, many of the employment contracts will allow holidays to be taken or money paid, but only within certain time limits. For example, in a previous job, I was allowed to carry over 5 days from one holiday year to another, or I could opt NOT to take them, and be paid extra instead. In my current job, I either take the holidays, or lose them. No carry over, no additional payment (except in exceptional circumstances), so it is worth while checking the contract that you sign, cause that's what you'll be bound by.

we could request a day or two off a week or 2 in advance if, for example, we had mates out to stay.

some people wanted the extra money at the end (I never saw the point cos its a pittance and i'd rather have the time off). like people have said i think its the 2days a month holiday thing.

most of us took most of it at the end cos then we could all go out and party together.

If you seriously think you'd need a holiday during the season you should be asking yourself if you are really cut out to do a full season. Perhaps you should consider an alternative, such as getting peak season work, or going to resort in January, and trying to pick up work.
